The Esteemed "Asahi" Variety, from the Prized Terroir of Uji Shirakawa
Uji Shirakawa, Kyoto Prefecture. From the same producer as our "Kaoru" matcha comes "Rin." A unique characteristic of the "Asahi" variety is that its optimal harvest time is much earlier than other cultivars. Because it is harvested in a very young state, it possesses a certain bitterness and astringency, but this is accompanied by a significantly higher amino acid content. Furthermore, the distinctive gravelly soil of this area (called "sarekishitsu," containing gravel and sand within red clay) allows the tea plants to absorb nutrients easily, which helps produce a matcha with an exceptionally bright and clear color.
A Complex Journey of Flavor
This matcha offers a dynamic tasting experience. While you will first notice a slightly sharp bitterness, a direct result of the young leaves, it soon gives way to a creamy sweetness that spreads across the palate. The experience concludes with a long, elegant umami aftertaste that lingers beautifully.
